한입 베어무는 순간 피어오르는 구운 찹쌀의 고소한 풍미는 오직 떡을 쫄깃한 상태로 한장한장 손으로 잘라 구워내야만 얻을 수 있습니다
밀가루,지방,물엿등을 넣어 액체반죽상태로 구우면 자동화로 몇 배나 빠르게 생산하고 풍미의 80%를 낼 수 있지만 저희는 나머지 20%더 높은 품질을 위해 비효율을 감수합니다.
제조과정
모든 과정은 하나하나 수제작으로 진행이됩니다.
모나카가 가지고 있는 원래의 풍미를 간직하기 위해서
찹쌀의 제분과정부터 직접 옛 방식으로 제조하고 있습니다.
수침
계절에 따라 물온도와 시간을
조절하며 적절한 찹쌀의 상태를
수시로 체크합니다.
분쇄
부드러운 식감을 위해 곱고
균일하게 제분하고 미세망으로
체에 칩니다.
호화
스팀과 반죽치대기를 찹쌀 원물의 상태에
따라 조절합니다.
여기서 식감이 결정됩니다.
재단
풍미를 위해 자동화가 어려운 찰기
가득한 반죽을 숙련된 장인이
한장한장 제단합니다.
가열
통제가 어려운 찹쌀반죽의 팽창을
조절하는 고온 정밀설비를 통해
일정한 밀도로 구워냅니다.
검품
한장한장 테두리를 곱게 갈아내는
라운딩 가공 후 앞면과 뒷면을
꼼꼼히 검품합니다.
포장
밀폐포장으로 갓 구운 향을 머금은
제품을 금속검출기에 통과시킨 후
출하합니다.
